Barbecue Pork And Beef Sandwiches.
This more like a sloppy joe than pulled pork, but it’s easy, tasty and feeds a bunch. This came from Good Housekeeping, June 1993. with credits to a Nov 1975 “Crockery Cooking”. This is good winter food when it’s too cold or just too much trouble to get a gourmand attitude. Of course quantities and ingredients can be adjusted to what’s on hand. I would use the supermarket type of chili power that has all the other spices in it (like cumin). As if I’d ever pay for a quarter cup of pure chili.
About 8.5 hours before serving: In a 3.5 to 5 quart slow cooker, combine 1.5 pounds of beef for stew, 1.5 pounds of pork cubes, 2 cups chopped onions, 3 green peppers chopped, one 6 oz can tomato paste, 1/2 cup packed brown sugar, 1/4 cup cider vinegar, 1/4 cup chili powder, 2 teaspoons salt, 1 teaspoon dry mustard and 2 teaspoons Worcestershire sauce. Cover and cook on “high” (300) for 8 hours. With wire whisk stir mixture until meat is shredded. To serve, line twelve 6 inch long hard rolls with leaves from Boston lettuce fill with meat mixture, sprinkle with chopped tomato. Makes 12 sandwiches.
